Forgotten pathogen
Food poisoning caused by toxins secreted by certain types of staphylococci have been known for more than a century, but recently they have not been given much attention. This paper describes food poisoning by staphylococcal enterotoxins that occurred at the beginning of the year in Zagreb. The reason for sampling was food poisoning in a fish restaurant in 6 people, 2 of them were hospitalized due to digestive problems. They vomited over 30 times a day and had diarrhea. The common dish for all was shellfish - oysters and sushi. Food testing was carried out according to the HRN EN ISO-6888 standard for determining the number of coagulase-positive staphylococci in food, and testing of nasal swabs of workers in the kitchen and waiters was carried out. The isolated strains were tested for the presence of 13 enterotoxicity genes. All samples showed amplification at the same three gene loci, while no amplification was detected at other loci. This food poisoning shows that caution is needed in food preparation and the introduction of corrective measures in the kitchen so that such poisonings are as rare as possible.
