Alginate hydrogel beads as building blocks for delivering of polyphenols
Alginate is a biopolymer which, due to its biocompatible and biodegradable properties has numerous potential applications in various food industry sectors. Development of alginate hydrogel beads by the process of microencapsulation enables the preservation of the entrapped material. As encapsulated materials polyphenols were selected. Polyphenols are well-known health-promoting components which are increasingly explored. Through the improvement of their stability, their range of applications is expanding. The purpose of this chapter was to build upon the available literature data concerning polyphenols as encapsulated materials in alginate hydrogel beads. The main challenges concerning the alginate porous structure were addressed as well. Considering the versatile properties of polyphenols and alginate, these components certainly deserve the attention of the scientific community in order to be fully exploited.
