Peanut allergens in samples of cookies and tea biscuits

In order to detect allergens as hidden food ingredients, the ELISA (Enzyme-Linked Immunosorbent Assay) method was used in this study for detection of the peanut allergens presence in total of twenty-eight samples of cookies and tea biscuits from the Zagreb market. Ten samples were taken from supermarkets, ten from bakeries and eight from the pastry shops. The obtained results were also compared with available food information about the peanut presence in analysed products. Among twenty-eight analysed samples of cookies and tea biscuits, peanut allergens were detected in twenty-seven samples (average 0.37 mgkg-1 in samples from supermarkets, 0.38 mgkg-1 in samples from bakeries and 0.28 mgkg-1 in samples from a pastry shops) of which only two samples from supermarkets had declared advisory label related to the presence of peanut allergens. Food information on analysed samples of cookies and tea biscuits from bakeries and pastry shops did not provide any indication of the presence of the peanut allergens. Taking into account that peanut consumption is often associated with severe reactions among population with nutrition allergies, unintentional exposure to peanut allergens is the biggest problem facing those people. The results of this study pointed out the importance of a control of the unintended peanut allergens presence in food and the proper consumers informing in order to protect their health.
