Quality Characteristics of OS Wheat Cultivars
Quality characteristics of OS wheat cultivars were evaluated of 10 winter wheat cultivars selected at Agricultural Institute, Osijek, Croatia. In this study were investigated quality parameters of wheat: grain protein content, sedimentation value, wet gluten, farinograph and extensograph characteristics of flour. Sodium dodecyl sulfate polyacrylamide gel (SDS) electrophoresis and lasers scanning densitometry were used to quantify storage proteins of wheat cultivars (HMW glutenin subunit composition). Glu-1 quality scores were here correlated with measurements of seed quality parameters.The results in this study indicated that Glu-1 quality scores showed strong correlation with Zeleny sedimentation value and good correlation with extensograph properties.
