Lactobacillus rhamnosus GG from Different Kinds of BioAktiv Yoghurts - Survival and Probiotic Activity
The survival and activity of probiotic strains are very important in maintaining good quality of the probiotic products. The aim of this work was to determinate the viable count of Lactobacillus rhamnosus GG in different kinds of BioAktiv yoghurts from LURA d.d. during storage at 4 oC. At the end of the shelf life (40 days) viable count has been 3.2 x 107 CFU/g in natural yoghurt and 6 x 107 CFU/g in fruits yoghurts. The culture supernatant of L. rhamnosus GG has shown high degree of antimicrobial activity against enterophatogenic (Escherichia coli and Salmonella mumum) and spore-forming (Bacillus subtilis) test microorganisms. Also, it was determined autoaggregation of L. rhamnosus GG (65 %) and coaggregation (15 %) with above-mentioned test microorganisms. The relationship between autoaggregation and adhesion ability was confirmed by in vitro adhesion of L. rhamnosus GG to porcine gastric and ileal epithelial cells.
