Wine production evidence on Novo Selo Bunje site (island of Brač, Croatia)
The aim of our project was to study the economy in Central Dalmatia with the case study on the Novo Selo Bunje site. A small farm was built there in the middle of the 1st c. AD, followed by a large scale villa rustica in the 2nd c. AD. Later, in the 4th c. AD, structural changes and additional building were done. Pars rustica was an important part of this villa. Impressive presses were built here with attendant basins. To understand better all the structures and production process on this site and in Central Dalmatia in general, chemical analyses were done on different production structures (presses, channels and tanks) to understand if they produced olive oil or wine, or both. This presentation will be the occasion to present a synthesis about wine and oil production in Central Dalmatia in the Roman period, focussing on the history of techniques.
