The effect of climate change on the secondary metabolism of Aspergilli
Intergovernmental Panel on Climate Change found that increasing temperatures, frequencies and duration of extreme weather events, as well as elevated CO2 and ozone concentrations in the atmosphere likely impact also on the quality of food. One of the important aspects of the food safety is food and feed contamination with mycotoxins. The main mycotoxigenic fungi are belonging to genus Aspergillus. According to Rapid Alert System for Food and Feed, in 2020 aflatoxins are responsible for 92 % from all mycotoxin notifications in whole European Union. Aflatoxins biosynthesis pathway takes place in several organelles of fungal cells and requires great energy input. This multi-step process is modulated by temperature, water activity, CO2 concentration and VIS light. Based on that, the aim of the study is to overview what are the main mechanisms in Aspergilli cells that are regulating secondary metabolism, i.e. aflatoxin production, and what are the environmental factors, nowadays modulated due to climate change, that are affecting those mechanisms.
