Valorization of seafood processing by-products
Seafood products are delicious, nutritional, and healthy foods, whose popularity is growing. In this regard the seafood processing industry is becoming one of the major food production sectors ; however, besides high-quality food products, processing operations generate huge amounts of highly perishable by-products each year. Also, the rise of global aquaculture and the trend toward the production of ready- to- eat products requires more processing and generation of byproducts, so instead of dumping them in landfills creating disposal and pollution problems, the use of by-products is becoming an important industry. A major portion of seafood by-products is used for the production of fishmeal and fish oil used in feed production. However, there are many valuable components such as polyunsaturated fatty acids, bioactive peptides, collagen and gelatin, enzymes, calcium, water-soluble minerals, vitamins, carotenoids, chitin, and chitosan that can be extracted from by-products for potential application as nutraceuticals and pharmaceuticals, but also in other industries such as food, cosmetics, or biodiesel production. This chapter summarizes recent trends and challenges in adding value to discards and seafood processing by-products that can provide sustainable options in building more efficient and profitable disposal strategies.
