Antioxidants in Food - A Theoretical Approach
This lecture gives an introduction to the theoretical approach in the study of antioxidants in food. It includes a short overview of main reaction mechanisms underlying antioxidant activity of polyphenolic natural compounds, such as quercetin, and computational tools useful for study of such compounds.
