Sažetak
Honey is produced by the bees from flower nectar or honeydew and chemically it is mainly mixture of various sugars among which fructose and glucose are predominant. Due to its high nutritional value and therapeutic properties, that are associated with its botanical origin, honey gains high market price which is why it is often a target for adulteration. Therefore, guaranteeing the honey quality has become important for consumers, producers and regulatory authorities. Adulteration is most often carried out with addition of sugars syrups, mainly high fructose corn (HFCS) and/or sugar cane syrups. Several analytical techniques have been reported for detection of honey adulteration but Isotope Ratio Mass Spectrometry (IRMS) technique showed more reliable results than others with possibility to detect lower level of adulteration with sugar syrups. Method named Internal Stable Carbon Isotope Ratio Analysis (ISCIRA) was introduced by 1White and Winters (1989). The method is based on the fact that plants have distinct carbon isotope ratio (13C/12C expressed as δ13C in ‰) if they are produced by different photosynthesis cycle. Most honey bearing plants are C3 plants, while sugar cane or corn use C4 photosynthetic cycle. The honey adulteration is determined by comparing the δ13C in the honey and honey protein fraction wherein acceptable difference is up to 1‰ which is equal to 7% of added sugar syrup. In this work δ13C was determined in totally 143 samples from Croatia using IRMS coupled with elemental analyser (EA). Results showed that most of the samples were authentic and only in four samples more than 7% of added sugar was detected.
