WORKING STANDARDS AND PRODUCTIVITY IN HOTEL INDUSTRY
Croatian tourism and hotel industry characterizes a low level of productivity. In order to solve that problem it is necessary to define an adequate development strategy of tourism and hotel industry and the entire economy. Presumptions for the increase of productivity are: privatization, respect of the international working standards, permanent education, fair reward and stimulation of catering personnel and management, continuous improvement of labor regulations and continuous investments in new equipment and technology. The acceptance of international working standards becomes inevitable for the competitiveness of Croatian hotel industry. Working standards represent the basis for defining an adequate number of hotel personnel and their structure. Standardization of work embraces defining of standards, controlling of its implementation and training of personnel. Standardization of work is a long lasting process but it guarantees the quality of hotel services that is confirmed by the practice of world hotel industry.
